So refreshing and energizing! Smoothies are becoming a staple for me. A quick and easy power up and I get to hide veggies in there for the little ones. I am experimenting with different recipes now, but I promise to only post the good recipes. I’m really big on adventures; I like to try new things and experience new tastes. I used to be extremely picky, until I actually started trying food that is.
Anyways, Beets are a mystery to me. They are packed with nutrients, awesome for your health. I see them at the farmers stand and I always want to buy them. I’ve always wondered what can I do with them. So my first adventure with beets is this delicious smoothie. I must say I was very pleased.
Beets have an earthy taste which isn’t everyone’s favorite, although I kind of like it. Despite the taste, Beets are a really great addition to your diet. They are high in vitamin C, giving your immune system a boost. Beets are also high in fiber, potassium and manganese. Potassium is an electrolyte essential for muscle function. Manganese is good for your internal organs such as kidneys, liver and pancreas as well as the bones. Beets are certainly an item to drop into the diet; they are full of power. If you are not a fan of the taste you can easily hide it in a smoothie. Here’s my recipe…
What you need
- 1 Raw Beet
- 1-1 ½ cup strawberries (fresh or froen)
- ½ cup yogurt (Greek or coconut milk yogurt)
- 1 ripe banana
- ¾ cup Almond milk, coconut milk or milk
- 1 teaspoon Vanilla extract
How to make
- Peel Beet and slice into thin slices.
- Throw all ingredients into blender, I use a Ninja and have been very pleased.
- Blend together until you see a smooth mixture. It will be a beautiful hot pink color.
Note: If using all fresh ingredients add a few ice cubes to blender to thicken a bit
